Ingredients | |
4 | Matjes herring fillets (Scandinavian matjes) |
2 tbsp | finely minced red or yellow onion (or shallot) |
1-2 tbsp | finely chopped fresh dill |
Marinade | |
2 tbsp | pickling vinegar |
70 ml (about 1/3 cup) | sugar |
200 ml (about 3/4 cup) | tomato juice |
6 | black pepper corns, coarsly crushed |
1 tbsp | sherry, preferably dry |
Method | |
Cut herring fillets into approx. 1 inch pieces, on the diagonal (purely for aesthetic appeal).
Mix all marinage ingredients and pour over the herring. Add chopped onion and dill, and mix. Let stand for a few hours for the flavours to develop, before serving. |
