Sherry sill/Sherry herring

  Ingredients
4 Matjes herring fillets (Scandinavian matjes)
2 tbsp finely minced red or yellow onion (or shallot)
1-2 tbsp finely chopped fresh dill
  Marinade
2 tbsp pickling vinegar
70 ml (about 1/3 cup) sugar
200 ml (about 3/4 cup) tomato juice
6 black pepper corns, coarsly crushed
1 tbsp sherry, preferably dry
   
  Method
  Cut herring fillets into approx. 1 inch pieces, on the diagonal (purely for aesthetic appeal).
Mix all marinage ingredients and pour over the herring. Add chopped onion and dill, and mix.
Let stand for a few hours for the flavours to develop, before serving.
