Ugnsbakad lax på spenatbädd/Baked salmon on a bed of spinach

Ingredients
800 gram 1-1/2 to 2 lbs salmon filé, boneless and skinless
200 gram 7 oz spinach leaves, fresh
150 gram 5-6 oz parmesan, freshly grated
3 dl 1.2 c whipping cream
    salt, freshly ground black pepper
     
Preheat oven to 175°C (345°F). Wash spinach and remove stems. Drain.
Butter an oven-proof dish, and sprinkle some salt and pepper on the bottom. Salt and pepper the salmon.
Lay the spinach leaves on the bottom of the dish, and place the salmon on top. Pour the cream around the salmon, and spread the grated cheese over the top of the salmon.
Bake 20 mins., and check in the thickest part that the salmon is done. Serve.
